Directions
- Beat the cream cheese with the icing sugar until smooth. Beat in 2 tablespoons milk and the vanilla. Add the final tablespoon milk a little at a time until the glaze falls from a spoon in a thick ribbon. Set aside.
- Mix the cinnamon-sugar ingredients in a shallow bowl. Set a wire rack over a baking sheet for draining the fritters.
- Pour oil to a depth of 2 inches into a deep, heavy saucepan, keeping the pan less than half full. Heat over medium heat to 350 F (175 C), using a frying thermometer.
- Whisk the flour, 2 tablespoons sugar, baking powder, cinnamon and salt in a bowl. In another bowl, whisk the egg, 1/3 cup milk, melted butter and vanilla. Fold the wet ingredients into the dry ingredients until the flour is moistened, then fold in the diced apple.
- Carefully lower level tablespoonfuls of batter into the oil, working in batches of 5 or 6. Fry for 3 to 4 minutes total, turning as needed, until deep golden and cooked through. Keep the oil between 340 F and 355 F (170 C and 180 C). Split the first fritter to check that the centre has set before frying the remaining batches.
- Drain each batch on the rack for 1 minute, then toss lightly in cinnamon sugar. Drizzle with the cream cheese glaze while warm.
Serving and storage
Serve freshly fried. Refrigerate leftovers within 2 hours for up to 2 days. For the best texture, store the glaze separately and reheat unglazed fritters at 350 F (175 C) for 5 to 7 minutes before adding glaze. These bites get their cinnamon roll flavour from cinnamon sugar and cream cheese glaze.
